Creamy avocado pasta is a terrific meal that can be whipped up in less than 20 minutes. The ingredients are simple, but the combination creates a pleasingly deceptively rich main dish.

- 6 oz/170g pasta, any kind
- 1 large ripe avocado, pitted and peel removed
- 1 tablespoon fresh or bottled lime juice
- 1 clove garlic, minced
- 1/4 cup chopped fresh cilantro (fresh coriander)
- 1/2 teaspoon kosher salt (or quality sea salt)
- Freshly ground black pepper, to taste

1Place the avocado, garlic, lime juice, cilantro, salt and pepper into a food processor or blender.Ad

2Process the ingredients until smooth and creamy.

3Scrape the sauce out of the blender or food processor with a spatula. Put it into a medium-sized bowl.

4Cover the bowl with plastic wrap to prevent the avocado from turning brown too quickly. Set it aside while you prepare your pasta.

1Bring 5 cups of water to a boil in a medium-sized saucepan or cooking pot.

2Add the pasta and reduce the heat to medium.

3Give the pasta a stir to make sure that it doesn’t all clump together at the bottom of the pot.

4Cook the pasta for about 10 minutes, or until al dente. Read the instructions on the pasta package if you’re unsure how long this will be. Note that if you’re using fresh pasta, this takes less time to cook.

- Add some color to the dish by tossing in chopped cherry tomatoes.
- This meal is best if eaten the same day it is made. Indeed, it tastes best if you serve it immediately.
- This recipe is both vegetarian and vegan; it can also be gluten-free if you use gluten-free pasta.
- If you don’t have any cilantro (fresh coriander) on hand, you can substitute 1 cup of fresh spinach or parsley.
