Creamy avocado pasta is a terrific meal that can be whipped up in less than 20 minutes. The ingredients are simple, but the combination creates a pleasingly deceptively rich main dish.

Scrape the sauce out of the blender or food processor with a spatula. Put it into a medium-sized bowl.

Cover the bowl with plastic wrap to prevent the avocado from turning brown too quickly. Set it aside while you prepare your pasta.

EditMethod 2 of 3: Preparing the Pasta

  1. Make Creamy Avocado Pasta Step 5.jpg
    1
Bring 5 cups of water to a boil in a medium-sized saucepan or cooking pot.

    2
Add the pasta and reduce the heat to medium.

Give the pasta a stir to make sure that it doesn’t all clump together at the bottom of the pot.

Cook the pasta for about 10 minutes, or until al dente. Read the instructions on the pasta package if you’re unsure how long this will be. Note that if you’re using fresh pasta, this takes less time to cook.

Place a colander in the sink. Drain the water from the pasta.

EditTips

  • Add some color to the dish by tossing in chopped cherry tomatoes.
  • This meal is best if eaten the same day it is made. Indeed, it tastes best if you serve it immediately.
  • This recipe is both vegetarian and vegan; it can also be gluten-free if you use gluten-free pasta.
  • If you don’t have any cilantro (fresh coriander) on hand, you can substitute 1 cup of fresh spinach or parsley.
