How to Make Pempek

Pempek is traditional food from Palembang,South Sumatra,Indonesia. Made of fish and tapioca flour.Pempek has variety of sizes and shapes.Usually served with cuko (vinegar).This is one of my favorite food!Yummy!

- 500 g minced fish meat(Tenggiri)
- 150 g Tapioca flour
- Smooth salt
- 10 tablespoons cold water
- 2 teaspoons salt
- 1/2 teaspoons vetsin

1Fish to be processed, weeded and cleaned first.Ad

2Remove the skin from the flesh of fish.

3Exhaust all bones then,cut the fish in small piece.

4Insert the meat in to meat grinder and mince it.

5Put in the freezer.

6Put out minced fish meat from freezer,melted.

7Place it in bowl.Add cold water,vetsin and salt.Stir until sticky.

8Add tapioca flour little by little.And stir until not stick in hand.

9Take a little dough base.Then,form the basis of appropriate types Pempek.

10Fry the Pempek until coloured golden brown,drain.

11Plate the pempek and serve with cuko (vinegar)Ad
EditTips
- You can switch Tenggiri fish with Gabus,Tuna,Salmon or Carp fish.
- If you don't get meat grinder,you can use blender or stand mixer for mince the meat.

- Don't use fish with much fat!
