How to Make Tex Mex Beef and Potatoes

While this recipe version uses pre-frozen ingredients, it makes it more easier to whip up a quick breakfast or dinner side at the last minute.

- 1 pound ground beef
- 1 red pepper, chopped
- 1 onion, chopped
- 1 package (1 1/4 oz) taco seasoning mix
- 1/2 cup water
- 4 cups frozen cubed hash browns
- 1 package (10 oz) frozen corn
- 1/2 pound (8 oz) cheese block, cut into 1/2-inch cubes

1Preheat the oven to 350 degrees F.Ad

2Brown and cook the meat in a large skillet. Add the peppers and onions in the skillet and cook thoroughly. Drain the oils and place back on the heat.

3Add the water and taco mix into the skillet. Ensure the meat is well covered with the mix and add the cheese, potatoes, and corn. Combine everything together.

4Transfer the mixture to a 13" x 9" baking dish. Cover the top with foil.

5Allow the mixture to bake for about 20 minutes. Remove the foil and bake for an additional 15 minutes or until it's heated through.
