How to Make Raspberry Cordial

Raspberry cordial is delicious, and even more so if you're a lover of raspberries! Here is how to make it.

- 500g raspberries
- 1 orange
- 1 1/4 cup cups (310ml) water
- 1 1/4 cups (275g) sugar

1Place the raspberries in a food processor. Process the raspberries until smooth.Ad

2Cut the rind off the orange. Remove any of the white pith.

3Mix the water and the sugar in the saucepan. Over a low heat, stir the sugar around until it dissolves.

4Once the sugar has dissolved, add the orange peel. Bring the mixture to a boil. Once boiling, reduce the heat and allow simmering for 2 minutes.

5Add the raspberry puree. Leave the entire mixture to cool.

6Once cooled, strain the mixture through a sieve. Doing this will remove the raspberry seeds.

7Pour the strained mixture into a bottle or jug. It is now ready for drinking, or you can keep it in the refrigerator for up to 4 days.

8Serve. To make a drink, dilute the cordial using either soda water, water, or fizzy lemonade.
- Other uses include drizzling it over ice cream, yogurt, or a pudding. It can also be added to cocktails that need a raspberry flavour.

- The cordial can be frozen if wished. Pour into an ice cube tray and freeze. Remove the frozen cubes, put them into a suitable freezer bag, and keep in the freezer until needed. It can be frozen for up to 2 months.
