This is an alternative unprocessed, wholefood sweetener that you can make at home for regular use. The benefit of this sweetener is that its flavour is not as strong as maple syrup or honey.

  • 1.5 cups water
  • 1 cup soft dates (stones removed)
  • Pinch of salt
  • Teaspoon lemon juice

    Add the water to the blender. Add the dates.

    Start blending on low.

    Blend to a runny consistency. You can add more water while blending if needed. To improve the flavour, you can add a pinch of salt (optional).

    Add a squeeze of lemon juice to help preserve the sweetener. The sweetener will keep well in the fridge for a few weeks but the lemon juice improves the sense of freshness.

    Pour into a clean jar or container for storage.

    Use in place of other sweeteners such as agave. You will need to use about fifty percent more than agave syrup to get the same sweetness.
