How to Make Almost Candy

Peanut butter and crushed graham crackers are combined to make a familiar tasting peanut butter chocolate candy. The peanut butter balls are dipped in melted chocolate. Some recipes call the following candies Buckeyes.

- 1/4 cup graham cracker crumbs
- 1/2 cup butter
- 2 cups powdered sugar
- 1 cup creamy peanut butter
- Chopped peanuts, optional
- 12 ounces semisweet chocolate chips, melted
- 1 tablespoon shortening

1Blend graham cracker crumbs, butter, powdered sugar, peanut butter, and nuts if desired.Ad

2Form into 1-inch/2.5 cm balls.

3Melt chocolate chips and shortening together in microwave or double boiler.

4Insert toothpick into balls and dip in chocolate.

5Place on waxed paper-lined cookie sheets.

- Spray an 11 x 7-inch (biscuit pan) with nonstick cooking spray. Follow the recipe except spoon the peanut butter mixture into the bottom of the pan. Top with the melted chocolate. Chill. Cut into bars and serve. This makes a quick and easy version of the "candy". Make sure to serve this chilled as the bars become too soft when served warm.
