    Cut the meat into 2 centimeter (0.8 in) thick slices. Remove husks and fat. Set aside.

    For the marinade in a bowl mix all the ingredients with a little salt and pepper.

    Each piece of meat is given to the marinade and place in a large bowl. Cover with plastic wrap and allow to marinate at least 2 hours.

    If overnight to marinate, put in refrigerator.

    Before roasting the meat, bring to room temperature.

    The grill 5 minutes on each side for a medium steak.

    In a skillet, fry the crushed garlic with olive oil until it starts to give off aroma. Add the cream. Keep on heat for a few minutes to fall, and add blue cheese.

    Keep warm until steak is added. Sauce and roast should be at temperatures close.
