Place strips of foil around the edge of the pie. These will stay there until the middle of the pie begins to brown, so that you stop the edges from over-browning.
To reheat a pie from the fridge that has already been baked, try this: Dip a sheet of greaseproof paper in cold water. Allow excess water to drip off. Wrap this around the pie like a parcel. Reheat in a moderate oven. The wrapping will stop the pastry from turning dry and hard.
