When I type this into the REPL:

:set prompt "\ESC[34mλ> \ESC[m"

I get a nice purple lambda prompt.

For ghci, you put that command in ~/.ghci and the REPL will run the commands in that file on

There's no reason why you need to set a permanent override. You can use rustup run <toolchain> cargo … or the shorthand cargo +<toolchain> … instead.
