Move all Dockerfile samples to non-root user

Expected Behaviour

As an OpenFaaS end-user, I want to run all samples on my OpenFaaS cluster, even with the new non-root feature enabled.

Current Behaviour

What is changing? (Please include as many details as possible.)

The current eventing metrics have changed, and we need to properly document them in knative/docs.
We also need to add instructions on how to configure the different metrics backends.

How will this impact our users?

Users will be able to use metrics to better understand what is going on in their clusters.

perhaps this is related to the error state from the OpenShift isRunning check

The problem faced currently?

No problem, just an enhancement

There should be switch button at the bottom left corner of mission control where we currently show sc version. Which switches the color theme of mission control
