Put down the lighter fluid this Memorial Day Weekend! Using a chimney is the easiest and best way to light charcoal, without any toxic fumes or unpleasant flavors. All you need to do stuff some newspaper underneath the chimney, then fill it with natural hardwood charcoal.

Over a natural hardwood charcoal fire, with grate lowered right over high heat, char the leeks and set them aside. This will take about 4 – 5 minutes for young leeks. If your leeks are larger you will need to adjust for their maturity. bit.ly/3uvV5MJ

I have a different approach to the classic chocolate chip cookie: I like to add pieces of toasted pecans and favor chips over chocolate chunks or chopped chocolate shards. I prefer cookies that are crispy on the edges and soft in the middle. bit.ly/3odmAdM
